| Medallions of beef with mustard |

Ingredients (6 people):
* 12 medallions of beef (steak, goose, black pulp)
* Salt and freshly ground black pepper
* 2 tbsp. butter
* 2 tbsp. olive oil
Preparation Season the beef medallions with salt and freshly ground black pepper. Prepare the sauce in a saucepan together cream, mustard, salt and black pepper. Let reduce and stir with a wooden spoon. Before serving add the brandy and heat again. Cook the medallions in a hot skillet or griddle with butter and oil to prevent burning. Fry for six minutes or more depending on if the guest likes cooked a better term. Heat the sauce in double boiler and place in a separate container so that each person is served to your liking. If the sauce is thickened, add some beef broth. Do not add water, it loses the flavor, no more brandy, because it would be very strong flavor. Fostering medallions with fried potatoes, julienne vegetables or wild rice. |
